“So Vegan in 5” is a new cookbook for everyone, not just for vegans. It features over 100 plant powered creations that each use only 5 ingredients. I love the simplicity of this. I often give up on cook books when I see a long list of complicated ingredients that I need to go out and buy. I’m also more likely to recreate recipes that are easy to remember. So Vegan In 5 contains recipes for breakfasts and brunch, light meals and salads, dinners, desserts, sides, dips and snacks as well as staples, such as milks, sauces and jams. I love creamy filled pasta so can’t wait to try Creamy Spinach Ravioli. I’ve put off making my own pasta for ages but this recipe looks so simple- and delicious. It would be easy to experiment with lots of other filled pastas after giving this recipe a go.

I love ratatouille. When presented in a swirl it becomes a dinner party dish. It would make a lovely vegetable side dish too.

A nut roast is not just for Sundays! As we like to enjoy family days out on a Sunday sometimes we’ll have a comforting roast midweek instead. I love a nut roast, I have to admit I’m not keen on apricots (just personal taste) so I may adapt this one.
Thursday
I can’t wait to make and eat the Mushroom, Sage and Onion Wellington (recipe in book). Sage and onion is one of my favourite flavour combinations and this wellington is so simple to make (yet looks impressive). It uses ready made dairy free puff pastry but you can make your own if you prefer.
Friday
Friday is fake-a-way night and even better when it’s pizza and movie night! We already make vegan home made pizza but this Deep Pan Pizza looks delicious so we’ re definitely going to give this a go.
